Arabic coffee is traditionally roasted very light — often described as blonde or straw-coloured — pulled off the roaster well before the first crack that most Western medium and dark roasts pass through and continue past. That light roast preserves more of the bean's natural acidity and lighter, brighter character rather than developing the deeper, bittersweet roasted notes a darker roast builds up.
