Can You Freeze Spices to Keep Them Fresh?
Freezing can slow the flavour fade of whole spices somewhat, since cold temperatures do reduce the rate at which volatile aromatic oils break down, but it isn't the straightforward win it sounds like. The real problem is condensation: every time a container comes out of the freezer into a warm kitchen, moisture forms on the cold spice and its container, and that moisture is exactly what damages ground spices and speeds mould risk in a way freezing was supposed to prevent.
