What Are the Grades of Gum Arabic?
Gum arabic is graded on two levels: first by which acacia species it came from — hashab (Acacia senegal), the premium species valued for its pale colour and clean solubility, versus talha (Acacia seyal), a lower-cost, darker and less soluble alternative — and second by how clean and well-sorted the resin nodules are, from hand-picked whole nodules down through cleaned, kibbled and lower-grade siftings. Food-grade work almost always calls for hashab; talha is typically reserved for less demanding industrial uses.
For a buyer, the practical takeaway is that "gum arabic" on its own isn't a single specification — asking which species and which cleaning grade a supplier is quoting is the difference between a reliable stabilizer and an inconsistent one.
Hashab versus talha: the species split
Hashab gum, tapped from Acacia senegal trees across Sudan's gum belt and neighbouring growing regions, is the grade food and beverage manufacturers reach for — it dissolves cleanly into a low-viscosity solution, carries a near-neutral flavour, and runs pale amber to almost colourless once processed. Talha gum, from Acacia seyal, is generally darker, more viscous at the same concentration, and doesn't dissolve as predictably, which limits it mostly to non-food or lower-specification industrial applications. A supplier quoting simply "gum arabic" without naming the species is leaving out the single most important variable in the spec.
Cleaning and sorting grades within hashab
Beyond species, hashab itself is sorted by how the raw resin was cleaned and processed after tapping:
- Hand-picked, cleaned nodules — the top grade, sorted individually to remove bark and sand, sold as whole "tears" or lumps.
- Kibbled (crushed) gum — cleaned nodules broken into smaller, more uniform pieces for easier dissolving and handling.
- Spray-dried or powdered gum — processed further into a fine powder, convenient for direct formulation but a step removed from the raw resin.
- Siftings and lower-cleaning grades — the material left after the better nodules are sorted out, carrying more bark and debris; usable but requiring more preparation before food use.
Which grade suits food use
For food and beverage formulation — stabilizing emulsions, binding confectionery, thickening syrups — hashab in cleaned or kibbled form is the standard choice, since it dissolves predictably at a known concentration and carries minimal off-flavour.
