What Are Steam-Sterilised Spices?

Steam-sterilised spices are whole or ground spices that have been passed through saturated steam at a controlled, high temperature for a short, carefully timed dwell before packing — a decontamination step, not a cooking step, meant to reduce naturally occurring bacteria like Salmonella to a safe level. It's applied at the processing stage, before a spice ever reaches a mill's packing line, and it leaves no chemical residue behind. Most bulk-grade spices moving through international trade go through some form of microbial decontamination before export, and steam treatment is one of the most common methods used.

Why the treatment exists

Spices are grown, harvested and dried in open agricultural conditions, often in the field or on open drying floors, which means they can naturally carry low levels of bacteria picked up from soil, water or handling — Salmonella being the pathogen food-safety programs watch for most closely in dried spices specifically. Because spices are typically used in small quantities and often added late in cooking or not cooked at all, a contaminated batch carries more real risk than the same bacteria would in an ingredient that's always fully cooked. Decontaminating spices before they're packed and sold is a standard, expected step in the trade rather than an unusual or premium add-on.

Steam vs. irradiation vs. ethylene oxide

Steam treatment is one of three main decontamination methods used across the global spice trade, alongside irradiation and ethylene oxide (ETO) fumigation. Ethylene oxide fumigation, once common, has been phased down or restricted in a number of markets over residue and safety concerns and is increasingly replaced by steam or irradiation where a buyer wants a treated, food-safe spice without chemical fumigant residue.

Does it change the flavour?

Properly controlled steam treatment — a short, high-temperature dwell rather than prolonged heat exposure — causes minimal change to a spice's flavour and aroma in most cases, since the treatment window is measured in seconds to minutes, not the extended cooking times that actually drive off volatile oils. Whole spices generally hold their character through steam treatment better than ground spices do, since less surface area is exposed to the heat and moisture at once. A very delicate, high-volatile-oil herb can show a slightly softened aroma after steam treatment compared to an untreated batch, which is one reason mills calibrate treatment time and temperature by product rather than running one setting across every spice in a plant.
