The four ingredients every Mediterranean menu leans on

Caper grades, and why they're not interchangeable

Capers are graded by bud size, and the grade changes what a kitchen should use them for. Our range runs from 4–7 mm nonpareils and surfines through 7–9 mm capucines, 9–11 mm capotes and up to 11–13 mm fines — the smallest grades are the delicate, whole-bud capers plated on a fish or a piccata sauce, while the larger grades chop well into a tapenade or a sauce base where bud size matters less than volume.

State the grade you need in your inquiry rather than just "capers" — it changes both the format and how the case is packed, and getting the grade wrong is a common first-order mistake for kitchens new to ordering capers by grade rather than by jar size alone.

What caper grade should my kitchen order?
