Ajweh (عجوة) is dates cooked down into a thick, spreadable paste — the form dates take once they move from snacking fruit to a baking or confectionery filling. It's the base of the date filling in ma'amoul, date bars, and stuffed pastries across the Levant, valued for concentrating the fruit's sweetness without added sugar in most traditional recipes. Ajweh vs. plain chopped dates as a filling
Plain date filling is usually just pitted dates chopped or ground fine, sometimes warmed to soften before pressing into a mould. Ajweh goes a step further — the dates are cooked down, often with a little water, into a smoother, more concentrated paste that holds together better under baking heat and gives a deeper, almost caramelized flavour than chopped fruit alone. The difference shows up directly in the cookie: a plain date ma'amoul reads brighter and fruitier, while an ajweh-based one reads richer and denser.
Where the date-sweetening tradition comes from
The commercial date varieties most familiar in North America today trace back further than most buyers assume. The Medjool date — now grown at scale in California and Arizona — is believed to have originated in Morocco's Tafilalet region near Boudnib; in 1927, eleven offshoots were sent to the United States after bayoud disease devastated Moroccan groves, and nine survived to become the root stock of today's commercial Medjool supply (UC ANR, ucanr.edu). Whatever variety a producer starts from, cooking it down into ajweh is the same basic technique that turns a snacking fruit into a shelf-stable baking filling.

Making ajweh: what a bakery is actually doing when it 'cooks down' dates
Turning whole dates into ajweh is a straightforward process, but it's worth understanding if you're deciding whether to buy the paste ready-made or produce it in-house. Pitted dates are warmed gently with a small amount of water — sometimes with a little oil to keep the mass from sticking — and worked, either by hand or in a mixer, until the fruit breaks down into a smooth, cohesive paste with no distinct pieces of fruit remaining.
