What Is Muhammara Made Of?

Muhammara is a Levantine dip and spread built on three core ingredients: walnuts, roasted red peppers and pomegranate molasses, bound with breadcrumbs and olive oil and usually sharpened with a touch of Aleppo pepper or chilli and a little cumin. It originates from Aleppo, Syria, and belongs to the same mezze family as hummus and baba ghanoush — a thick, spreadable dip served with bread rather than eaten as a sauce.

The flavour is a genuinely distinctive balance of sweet, tangy and mildly spicy: pomegranate molasses brings the sweet-tart backbone, roasted peppers add body and smokiness, walnuts add richness and texture, and the chilli component sits in the background rather than dominating.

Roasted or grilled red peppers form the base and give muhammara its colour and smoky-sweet foundation; ground walnuts thicken the mixture and add richness and a slightly grainy texture; pomegranate molasses — reduced pomegranate juice, tart and syrupy — ties the two together with the sour-sweet note that defines the dish. Breadcrumbs are typically worked in as a binder to control the consistency, and olive oil finishes it into a spreadable dip rather than a chunky relish.

Aleppo pepper, a mild, fruity chilli associated with the same city as the dish itself, is the traditional heat source, sometimes supplemented with a plainer crushed red pepper where Aleppo pepper specifically isn't available.

How spicy muhammara actually is

Muhammara is generally mild to moderately spicy rather than hot — the chilli component is there to round out the flavour and add warmth, not to dominate the way a hot sauce would. Heat level varies meaningfully by recipe and by maker, since the amount and type of pepper used isn't standardised the way it might be in a packaged product, so two versions from two different kitchens can land at noticeably different spice levels even while both are recognisably muhammara.

Serving it on a café or mezze menu

On a mezze spread, muhammara sits alongside hummus and baba ghanoush as a dip served with warm pita or flatbread, and it also works well as a sandwich spread, a topping for grilled meats or vegetables, or a component on a cheese-and-preserves board where its sweet-tangy-spicy profile contrasts well against milder ingredients. For a café or catering menu adding Levantine dips, muhammara is a genuinely differentiated addition next to the more familiar hummus, since far fewer North American menus carry it.
